1 Med. white onion diced
4 stalks diced celery
4 carrots diced
2 bay leafs
2 tsp. chopped garlic
3 tsp olive oil
5 cups chicken or vegetable stock
1 cup corn
1 cup chopped broccoli
1/2 cup red peppers diced
1 cup peas
1 cup cauliflower chopped
Saute in olive oil until soft. Add chicken or vegetable stock. Bring to a boil. Add other vegetables or veggies of your choice. Simmer until veggies are soft, season with salt and pepper , fresh oregano, parsley, and basil.
