Eggs from VT Bed and Breakfast

For 4 servings use:

6 eggs
1/3 cup sour cream
1/2 tsp salt, pepper
1 tsp thyme
2 TBS onion or chives
1 cup cottage cheese
1 TBS parsley

Beat all ingredients together. Melt butter in pan, add eggs, cook over medium heat, stirring frequently until set. Sprinkle with parsley.
