For Salad:
3/4 lb. watercress, coarse stems discarded (about 4 cups loosely packed)
1 large or 2 firm-ripe mango, peeled, pitted, and cut into small slices
1 avocado peeled and cut into small slices
1/2 a large Jicama, peeled and cut into small sticks
Add the watercress to a large bowl and toss with dressing. Do not dress the salad. Lay the additional ingredients on top of watercress and spoon over some additional dressing
Serves 4
Cilantro Lime Dressing
1/4 cup fresh lime juice (about 2 large limes)
1/4 cup olive oil
1.5 TBS honey
2 TBS finely chopped fresh cilantro (or more to taste)
1 garlic clove, peeled and minced
1 tsp chopped jalapeno pepper (use canned for less heat) - optional
Mix dressing ingredients in Tupperware container with a tight fitting lid. Shake very well to combine.
